This is SWEET & SOUR FISH or known to most Filipinos as ESCABECHE.. This is very easy to prepare. All you have to do is fry the fish first. Then prepare the sauce. The sauce varies per region. Here in Cagayan de Oro, it is usually just a mixture of sauted Onions, Garlics, and other spices plus vinegar and water where brown sugar is dissolved… It is simmered to a boil, then a little water with dissolved cornstarch follows to make it sticky…Sauce is then poured unto the fish in its serving platter…
In Cebu, a friend has a different way of making the sauce… He used apple cider vinegar and honey instead of the regular sugar and vinegar…plus smoothened garlic and onions.. No more cooking…
But this fish here is done another way… We boiled the vinegar, sugar and water concoction until smooth. Set aside. Sauted onions, garlic, bell pepper and carrot strips.. When done poured the concoction onto the latter. Added whatever spices necessary. Then we let it cool a bit. After that, poured the sauce onto the fish in the platter…
